Why are the Paris catacombs not mapped?

The catacombs of Paris are fully mapped, both by the government and by amateurs that enjoy visiting them (which is illegal outside of the tour of the Denfert Rochereau catacombs). The mapping done by the government is necessary to monitor soil stability and ensure the safety of new constructions.

So, basically, workers went into cemeteries, removed the bones and piled them in the Catacombs. However, it was just the femurs and the skulls that we saw.
