Can something be gluten-free but contain wheat?
Many people believe the term “wheat-free” is interchangeable with the term “gluten-free.” Unfortunately, that’s not the case. In fact, in many cases foods labeled as “wheat-free” contain some gluten. 1 It’s also possible for foods that are labeled “gluten-free” to contain wheat-based ingredients, such as wheat starch.
Can you trust gluten-free labels?
If the gluten-free label is from a certified organization (ex. GFCO or the others listed above), you can trust the labeling as being less than 20 ppm. However, some people have a higher sensitivity and will still react to these low levels.
